The wine
Haut-Coustias, Cairanne blanc, is a blend of Marsanne, Roussanne, Clairette and Grenache blanc, whose yields have been extremely controlled (20 hl / ha). The vines, aged 65 on average, grow on clay and chalk-rich soils. The harvest is manual, the grapes are sorted and fermented in demi-muids with only native yeasts. The wine is aged for 12 months in barrels. It should be drunk in its youth, on the fruit to savour these indulgent aromas of pear, quince and white flowers. Its generous and flavoursome palette opens with notes of toasted almonds. Its beautiful aromatic persistence and body make it a fine, white gastro wine.
About the Producer Oratoire Saint-Martin
Frédéric and François Alary have been in charge of Domaine de l’Oratoire Daint-Martin since 1984 and represent the 10th generation of winemakers at the head of this vineyard! The great majority of this domaine is located to the north east of the Cairanne commune at around 200 metres altitude on a steep hill in an area known locally as “the mountain”. The domaine is certified biodynamic, yields are low and grapes are picked at optimum maturity. Elevage takes place in concrete vats, demi-muids or foudres. This producer is regarded as one of the best in Cairanne (along with domaine Richaud) and deserves its reputation as a reference!
