The wine
A real stalwart of the Barolo appellation, domain Cappellano boasts of a rich family history dating back 150 years. There is a pride in their transmission of savoir-faire and work ethic through the generations. Hence why this Barolo is such a great success. The Nebbiolo vines are grown organically in an ideal position facing the south and at altitude, the combination of which assures optimal maturity for the grapes. Once harvested, there is minimal intervention in the vinification process. Fermentation takes 2 to 3 weeks and uses only indigenous yeasts. What follows is a very long maturation in large foudre containers. The ageing process even continues once the wines are bottled so that they can refine further. Once in the glass this cuvée reveals a garnet hue with hints of orange, introducing a complex bouquet marked by dried flowers (violet, rose), herbs and Morello cherry. The palate is structured by present tannins and a frank acidity, the sign of good ageing potential and a certain vivacity.
