Arbois Vin Jaune Domaine Rolet 1976
The wine
To make this unusual wine, albeit typical of the Jura, the Savagnin grapes must reach peak maturation. Vinification is traditional, meaning it is matured under a film of yeast known as the voile. It ages like this for six years, without topping, remaining in contact with oxygen. The resulting wine has a clear yellow robe with golden reflections, revealing a perfectly balanced bouquet of spices and dried fruit; the palate is punctuated with similar flavours. Try a traditional, but no less divine, pairing with mature Comté cheese, chicken with morels, or a walnut dessert.
About the Producer Rolet
Created in the 1960s by M. Rolet, the eponymous domaine is the second largest in the Jura region, spanning 62 heactres. The property was passed on to his children Élyane, Pierre, Bernard and Guy who sold it in 2018 to the well-known Burgundian wine family, the Devillards (of Château de Chamirey, Domaine de la Ferté, Domaine des Perdrix and Domaine de la Garenne fame). No doubt this domaine, which already produced wonderful wines, will continue to impress in the years to come.
