The wine
Domaine Cordier produces this cuvée of old-vine Chardonnay from the eponymous vineyard (the climat ‘Les Cras’). The vines grow on complex soils characterised by a high proportion of clay, brown soils, stones and white, chalky limestone. After manual harvests and gentle pressing of the grapes, the juice ferments thanks to ambient yeasts. The wine is then raised for 12 months in casks. The Pouilly-Fuissé Vers Cras from domain Cordier boasts a limpid, bright yellow colour. Its nose is complex, with honeyed notes combining with dandelion, fresh butter and yellow wood. On the mouth, the wine is at once frank and generous, rich and dense. The length on the palate is impressive, ending on notes of citrus and white fruits, as well as grilled ntoes. This wine would pair perfectly with the following dishes: frog, veal blanquette, or chicken in a cream sauce.
