The wine
A family-run business for the last five generations, Domaine Joseph Voillot in Volnay totals 10 hectares spread across 35 parcels and 17 appellations in Volnay, Pommard, Meursault and Beaune. Joseph Voillot retired in 1995, and his son-in-law Jean-Pierre Charlot took over the running of the domain. Jean-Pierre is a highly knowledgeable oenologist, having taught the subject for many years in Beaune. The work in the vineyards and winery could hardly be more traditional, but everything is done immaculately. In the vines, the soil is ploughed two or three times a year; in the winery, the vinification process is traditional and parcel-based, using native yeasts and cap punching. The élevage process lasts for between 16 and 18 months, with around 25% new wood. This domain is particularly renowned for the refinement and perfect balance of its wines.

At the vineyard, the soils are worked twice or three times a year and in the winery, vinification is traditional and fragmented, with native yeasts and pressing. Élevage lasts between 16 and 18 months, with about 25% new barrels. This domaine is particularly renowned for its finesse and the perfect balance of its wines.
