The wine
Jean-Marc Boillot’s Puligny-Montrachet premier cru Les Combettes comes from a terroir that was long sold under the Meursault name. The soils indeed come very close to the appellation, thus the grapes enjoy the influence of earth rich in clay and chalk as well as exposure to the rising sun. The grapes are harvested by hand.
Once in the winery, they are pressed gently in whole bunches to preserve the purity of the fruit and the terroir’s identity. The must is kept on fine lees. Alcoholic fermentation takes place in oak casks and the domain allows malolactic fermentation to go ahead. The wine is then matured in casks for 11 months, with around 25-30% new wood.
In the glass, this wine is particularly marked by floral and fruity notes (white flowers, apple, pear, peach) enriched by nutty aromas like hazelnut and almond. Its generous palate is lifted by a certain minerality. We recommend uncorking this cuvée after a few years of ageing.
