More infoWith this Côtes-du-Rhône Villages Roaix, Elodie Balme focuses on power and spices. Suitable for ageing, wait 10 years before showcasing its aromatic intensity with flavoursome dishes (game, spicy dishes etc). The winemaker has vinified Syrah, Carignan, Grenache and Mourvèdre with their indigenous yeasts. Barrel fermentation is longer than that of her simple Côtes-du-Rhône. It lasts 20 days with daily pumping-over and rack and return during barrel fermentation. The wine is then aged in concrete vats, with no fining. After having been stabilised and lightly filtered, the wine is finally bottled.
