Cornas La Sabarotte Courbis 2013
The wine
This cuvée is made from Syrah from the plots of land located on the right bank of the Rhône, near Valence. Cornas is blessed with an ideal micro-climate to cultivate the domain's old Syrah vines. These grow in very poor soil where rocks surface. The bunches are harvested by hand, destemmed then crushed. They are then vinified in thermo-regulated stainless-steel vats. Extraction gives the wine its beautiful hue. There is numerous and regular pump-over and maceration can last almost a month. The wine is then aged in new barrels and malolactic fermentation takes place in new barriques. After 18 months’ ageing, the wine is bottled. Dominique and Laurent produce 5,000 bottles like this every year and the wine is perfect for keeping.

Maceration takes place in temperature controlled concrete vats and maturation in new oak barrels
