The wine
This is the Prestige cuvée from one of Chablis’ finest domains. The vines used to make it are around 28 years old and are planted in the appellation’s excellent Kimmeridgian soil. Picked by hand, the grapes are pressed pneumatically, allowing them to retain their aroma. Vinification takes place in stainless steel vats followed by a year-long maturation, with 20% in oak casks to bring more roundness. The Cuvée Tête d'Or has fruity aromas (citrus, white flower), and a slight hint of vanilla. The palate is rich and fresh and the fruity and mineral finish is pleasantly long.
About the Producer Billaud-Simon
Domaine Billaud-Simon was founded in 1815 and covers 17 hectares of the most beautiful terroirs of Chablis, with four grand crus (Les Clos, Les Preuses, Vaudésir and Les Blanchots) and four premier crus (Montée de Tonnerre, Mont-de-Milieu, Fourchaume and Vaillons). In 2014, the domaine was bought by the Faiveley family, who confirmed their determination to maintain the Bernard Billaud style with precise wines, which stand out for their fine minerality.
