The wine
This cuvée owes its name to the clay-earthed locality it comes from. The Chenin grapes were harvested by hand and sorted several times before being extensively fermented. It presents a superbly fruity and delicious concentration lifted by an acidity that is typical and masterful, giving it great cellaring potential and a welcome freshness. This is a wine best served with blue cheese or fruity desserts.
