Domain Carlo Viglione’s Dolcetto d’Alba comes from a soil rich in chalk and clay where the vines are grown as naturally as possible. The harvest (completed by hand) is destemmed before the grapes are fermented using wild yeasts in 25-hl oak casks. There is then a 12-day maceration in contact with the skins, and finally a 12-month maturation that takes place in the same containers. In the glass, this is a relatively simple but well-made wine, a nice bottle to pair with an everyday dish. Its defining features are its cherry notes and its beautiful balance: quite full-bodied, its tannins are well-integrated and elegant, alongside a pleasant freshness and a hint of sweetness. The finish, quote longlasting, brings a nice bitterness. This is a cuvée that will pair nicely with chicken and other white meats, or maybe a charcuterie board.
