The harvest (completed by hand) is destemmed before the grapes are fermented using wild yeasts in 25-hl oak casks. There is then a 12-day maceration in contact with the skins, and finally a 12-month maturation that takes place in the same containers. In the glass, this is a relatively simple but well-made wine, a nice bottle to pair with an everyday dish. Its defining features are its cherry notes and its beautiful balance: quite full-bodied, its tannins are well-integrated and elegant, alongside a pleasant freshness and a hint of sweetness. The finish, quote longlasting, brings a nice bitterness. This is a cuvée that will pair nicely with chicken and other white meats, or maybe a charcuterie board.
