Oronce de Beler enthusiastically produces what he calls Mousses Sauvages (wild brews). These distinctive beers are crafted by blending fruit juices with natural yeasts from the estate’s wine fermentation process. Once the carbonic fermentation of bunches of Mirabelle plums in stainless steel vats has been accomplished, the fruit is carefully pressed. The juice, at the height of its fermenting power, is blended with a beer mash that uses the yeasts from the fruit. Finally, the beer undergoes a long maturation period of eight months in oak foudres (large tuns) before being carefully bottled and undergoing a second fermentation.
The golden colour reveals a fruity bouquet, marked by intense Mirabelle plum aromas complemented by great freshness. The light, fruity palate delicately leads to a flavoursome persistent finish. This beer will happily sit in a cellar for a few years before being enjoyed.
