Domaine de la Cras was bought by the City of Dijon in 2013, and it stretches across 160 hectares between the communes of Dijon, Plombières-lès-Dijon and Corcelles-les-Monts. The idea of this purchase was to preserve the city's green-belt land. Marc Soyard is the wine maker running the 8 hectares of certified organic vines that are worked biodynamically. 5 hectares are planted with Pinot Noir and 3 with Chardonnay. Originally from the Jura, Marc worked for several years at Domaine Bizot in Vosne-Romanée. The most important aspect of his work is his respect for nature. “Wine is a natural thing, a living thing, there's nothing artificial about it.” The vinification carried out involves very little intervention. The wines from this domain can be aged for a few years before being enjoyed.
Marc Soyard comes from a prestigious background, having spent a decade working for the emblematic Burgundy winemaker Jean-Yves Bizot. He quickly became extremely fond of his Chardonnay vines, which he cultivates with the utmost diligence. From the moment he arrived at the estate, he converted each parcel to organic viticulture and, simultaneously, adopted a biodynamic and natural approach both in the cellar and in the vines. The vines used for this 100% Chardonnay originate from a parcel situated high up in the hills above Dijon. The Chardonnay grapes are hand-picked at peak ripeness. Crafted using reduction techniques, this 100% Chardonnay is vinified without any additives or sulphur.
The golden bright shiny colour reveals a delicate and bewitching nose displaying notes of yellow fruit. The fruity light palate is graced with an incomparable minerality delicately leading to a fresh, flavoursome finish. A cuvée to be enjoyed young.
