Maison Besserat de Bellefon originated in Aÿ in 1843 with the creation by Edmond Besserat of his champagne house. It was renamed Besserat de Bellefon after the marriage of Edmond Besserat (the founder’s grandson) to Yvonne Meric de Bellefon. This champagne house is particularly famous for its "Cuvée des Moines", developed for gastronomy, in response to the challenge launched by the Director of the Samaritaine de Luxe to design a champagne designed to ideally accompany an entire meal.
Besserat de Bellefon crafts its finest cuvée with a meticulous blend of 45% Pinot Noir, 45% Chardonnay and 10% Meunier. Besserat de Bellefon sources these grapes from five Grand Cru villages and two Premier Cru villages. The unique process involved in producing this cuvée has been respected, handed down and perpetuated from one generation to the next, since 1930. This unique process notably involves the use of wood for both ageing and fermentation. Besserat de Bellefon also uses less ‘tirage’ liqueur and the cuvée does not undergo malolactic fermentation.
The intense colour is graced with elegant amber tints. The expressive, subtle bouquet is characterised by aromas of milk bread combined with hints of citrus fruit, which mingle in a light, airy foam. On the palate, a fine balance of tension and purity is struck, leading to a flavourful, slightly spicy finish of remarkable length.
