Produced from Chardonnay vines over 35 years old, Éclat de Calcaire comes mainly from parcels in Meursault, Volnay and Pommard. These vineyards benefit from a limestone terroir, giving the wine an exceptional minerality. The rich and well-drained soils bring freshness and an aromatic purity to the wine. The harvests, which are done by hand, preserve the quality of the grapes and fermentation is carried out using indigenous yeasts to respect the authenticity of the grape variety. Ageing takes place in barrels - of which 30% are new - and lasts for nine months, followed by four months in stainless steel vats. This method combines the complexity given by the wood and the preservation of freshness.
The wine has aromas of white fruits, such as pear and apple, alongside floral and citrus notes. On the palate, it stands out for its silky texture and balanced acidity, supported by an elegant minerality. This bottle is the perfect pairing for seafood dishes, poultry and soft cheeses.
