This Pommard Les Vignots comes from a vineyard that flourishes on clay-limestone soils rich in minerals. Harvests are carried out by hand to preserve the integrity of the grapes. Vinification starts with fermentation in temperature-regulated stainless-steel vats, where the indigenous yeasts begin the process of transforming the must into wine. Maceration lasts for around three weeks, allowing for optimal aromatic, tannic and colour extraction. This Pommard is then aged in French oak barrels, of which some are new, for 12 to 18 months. This ageing in barrels gives subtle notes of vanilla and toast, all whilst preserving the fruity and spiced aromas of the wine.
The wine is characterised by its complex aromas of red and black fruits, such as cherries, blackberries and blackcurrants, enhanced by hints of spice and wood. On the palate, it offers a wonderful structure of well-presented and harmonious tannins and a long finish.
