“Pech de Rozies” means “Rozies Hills” in Occitan, a nod to the site from which the wine hails, nestled in the Hautes Corbières mountains. This rosé is a blend of 70% Grenache Noir and 30% Syrah, grown on schist soils. The estate is certified organic and biodynamic. Harvesting is done by hand, using 13 kg crates.
In the winery, the grapes undergo direct pressing (direct press rosé), with fermentation taking place in stainless steel tanks (4/5th) and large oak barrels (1/5th). The low-intervention winemaking process involves native yeasts, no fining or filtration, and a homoeopathic dose of sulphur at bottling (under 4 mg/L).
Upon tasting, this rosé reveals a beautiful salmon hue. It is as enjoyable as a pure red fruit juice, with wild berries, strawberry and redcurrant weaving together in a deliciously inviting profile. Enjoy it well chilled at 9°C–10°C, as an aperitif or alongside grilled vegetables or a chicken curry.
