Domaine de Cassiopée, located in the heart of the charming Burgundy commune of Sampigny-lès-Maranges, is run by Hugo and Talloulah Mathurin, a young couple of enthusiastic winemakers. Established in 2020, the vineyard boasts 5 hectares of vines stretching across some of the region’s finest appellations. Their ambition is to produce wines that perfectly reflect the identity and characteristics of each of their plots. To achieve this, they cultivate each parcel in a specific way, providing them with all the care they need. Each step in the vineyards is carried out with the utmost respect for the soil and biodiversity. In the winery, vinification involves minimal intervention and sulphur is used in minute quantities. It is in this peaceful, harmonious setting that the young winemakers produce fragrant, authentic wines that perfectly reflect the grape varieties and terroir in the purest Burgundian tradition.
Comprising the estate’s oldest vines, some of which are 110 years old, the Les Plantes climat produces particularly complex and flavoursome Pinot Noir wines. The estate applies sustainable and balanced viticulture methods, in line with organic farming and a number of biodynamic principles, to reveal the unique identity of each plot. Harvested Pinot Noir grapes are transported to the winery where they undergo a natural vinification process. Long post-fermentation macerations are performed to extract all the fruit’s delicious aromas.
The brilliant ruby colour is complemented by a dazzling bouquet of generous red fruit aromas combined with light spicy notes. The rich, fresh palate displays a superb balance between fine tannins and subtle acidity, leading to a lingering peppery finish. This cuvée promises excellent ageing potential.
