Information
Les Renardières is a blend of Grenache, Syrah and Cinsault. The vines are cared for using organic practices and are planted at an altitude of 300m and 350m within the Terrasses du Larzac appellation (created in 2014). Biodynamic principles, such as herbal mixes, are also used. Alongside its vines, Domaine de Ferrussac manages a herd of cows and uses their manure in the vineyards.
After harvesting the grapes by hand, plot-by-plot vinification takes place so that the blends can be as precise and as balanced as possible. In the glass, the wine is a beautiful cherry colour, echoing the cherry trees that are dotted around the vineyard. The fine nose reveals beautiful notes of red and black fruits, soft spices and mint. Serve the wine at 15°C-16°C with beef cooked on the barbecue, carpaccio or herbed sausages.
