Information
Domaine le Fay d’Homme, located in Monnières, is run by the Caillé family. Today, it’s represented by the fifth generation of winemakers which has been at the head since 1986. Ten years after taking over the reins, he decided to grow his vines and make his wine according to organic and biodynamic principles (and holds Ecocert and Demeter certificates). This meant that the domain produced the first organic Muscadets from Nantes.
The wine is made with as little intervention as possible. Fermentation is started by natural yeasts that are present in the grapes before the resulting wine is aged on its lees in different containers for a long time. The 25 hectares of vines are planted with different varieties: Melon de Bourgogne, Folle Blanche, Gamay, Abouriou, Côt and Cabernet.
