Information
The story of Domaine Goisot goes back to the 14th century. It has vines in the Auxerre area in Saint-Bris and Irancy. Jean-Hugues and Gilhem Goisot chose biodynamic viticulture as the best way to respect the upper Jurassic marl, limestone terroir very similar to that of Chablis. Their motto is that a good wine cannot be made without good grapes. Vinifications are traditional, with minimal intervention to best express their much cared-for terroir.
The young Pinot Noir vines, on average around ten years old, grow in the Court Vit climate. The strict biodynamic practices applied in the vineyard are a true masterpiece, producing a raw material of the highest quality. The predominantly limestone soils also provide the vines with all the nutrients and energy they require to thrive. The carefully harvested fruit is vinified in casks in a traditional, low-intervention way before bottling.
The young vines produce a bright, charming, ruddy colour. The heady, delicate bouquet reveals expressive red and black fruit aromas combined with subtle notes of rose petals. The supple, elegant palate reveals a superb balance between depth and freshness, with fine, crisp tannins leading delicately to a delicious, lingering finish.
