The Cellier Saint Benoit estate lies at the heart of the Jura, in the village of Pupillin and focuses all its attention on its vines, implementing natural and responsible viticulture methods, tending towards an organic approach. Benjamin Benoit, the winemaker, also keeps tillage to a minimum to avoid compacting the soil, to promote microbial life. Everything is done by hand, without tractors, and neither fertilisers nor chemical weedkillers. The winemaker shows great patience in the winery, which is essential for the proper gestation of a wine, and is reflected in the hourglass on the wine labels.
The clear, bright colour reveals an elegant, fragrant bouquet, characterised by scents of vanilla and subtle hints of lemon. Full-bodied and delicate on the palate, with a beautiful minerality leading to a fresh, elegant and delicious finish.
