Dominique Lafon, winemaker and owner of the emblematic Domaine des Comtes Lafon in Meursault, also offers a range that bears his name. This trading business of Meursault and Volnay is of a very high standard. The high quality grapes are vinified by Dominique Lafon with the same care as those of the Domaine de Comtes Lafon. These wines are a great way to taste the Dominique Lafon style for those who cannot access the famous domaine.
As well as owning the renowned Domaine des Comtes Lafon, Dominique Lafon has a parallel project, in which he purchases grapes and vinifies the cuvées under his own name. The Pinot Noirs for this particular cuvée come from three different parcels and are vinified using the same method as the wines from the domain. After being harvested, the sorted grapes are completely de-stemmed in order to retain as many whole grapes as possible. They are then placed into temperature-controlled vats and cooled for a pre-fermentation maceration period lasting four to six days. Spontaneous fermentation starts and lasts for around ten days with interspersed punch downing intervals. After pressing, the wine is transferred to oak barrels, a third of which are new, with the help of gravity to age for 18 to 22 months.
In the glass, this Premier Cru evokes a bouquet of blackberries and spices, accentuated by a subtle woody aroma. Fleshy and deep, it is well-structured with white pepper appearing in the finish. This wine can be stored for ten years in the cellar.
