Jonathan Purcell took his first wine-making steps with Gamay from Beaujolais. He is now taking on another challenge with this delicious Bouzeron Aligoté. This small, Côte Chalonnaise appellation, which stretches over roughly fifty hectares, is known for only producing white wines from golden Aligoté. This variant with its finer skin than traditional Aligoté becomes gold after being in the sun and has a wonderful balance between alcohol and acidity. Harvested by hand and pressed straight away, the grapes are vinified without additives and fermented without temperature control using natural yeasts. The wine is bottled without fining, filtration or added sulphur.
Only produced in tiny quantities, Alibi #3 shows off its pale colour that shimmers green when it catches the light. Notes of mimosa, citrus fruits and hazelnut rise from the glass while on the palate, it is round but balanced by a beautiful liveliness. A lovely wine to pair with simple (but tasty) dishes like quiche lorraine.
