Burgundy climats sometimes have names with surprising etymology, but this one, a little over two hectares in size, simply takes its name from the road that runs alongside it leading to the village of Chaux. Domaine Chicotot owns a 28-hundred-square-metres plot of it. The lower part is planted with Pinots that are more than 75 years old and further up, in a cooler area, 40-year-old stocks can be found, replanted after the frost in 1985. The organically grown grapes are harvested by hand and then macerated for five to six days before fermentation starts, initiated by natural yeasts. They stay there for a fortnight and are interspersed by punching down and racking. Then, the must is pressed and placed into oak barrels with 25% of them being new oak.
Rue des Chaux is deep and juicy, flaunting a nose perfumed with raspberries, peonies and sweet spices. Ample, upright, it possesses velvety tannins and a beautiful finish. A wine which reveals all its potential after several years in the cellar.
