L’Anjou Blanc is a 100% Chenin dry wine that starts its life firmly rooted in schist soil. In the vineyard, everything is geared towards encouraging biodiversity to flourish and benefit the soil. The estate practises organic and biodynamic viticulture and adheres to a strict reforestation and biodiversity reintroduction programme. Harvesting is carried out manually, using small crates to preserve fruit integrity.
Once in the winery, the berries are completely destemmed before fermentation (using only native yeasts) and a short maceration period of around three weeks. The wine is then matured in concrete vats for 11 months, to fully reveal the finest aromas of the Chenin grapes.
Tasting the wine gives the impression of biting into a luscious fleshy piece of fruit. Indulgence takes precedence as this wine offers remarkable generosity. Consider serving it with a foie gras starter, or during the meal alongside a chicken in a creamy morel sauce or a spiced lamb tagine for a touch of exotic flair.
