Cyril Fhal has been pampering his vines since his arrival in Roussillon in the early 2000s. So great has been his input that his wines are imbued with this delicate love, revealing themselves to delight wine-lovers with their precision, refinement and elegance. The key to his success? The biodynamic cultivation of all five hectares of his vines. His old Carignan, Cinsault, Grenache and Maccabeu vines are located at an altitude of between 200 and 250 metres, and their yields are restricted to 18hl/ha.
Run by Cyril Fhal since the 2000s, the Roussillon domain Clos du Rouge Gorge has built a solid reputation with its precise, biodynamically-produced wines. To craft this cuvée, the producer dotes on his Carignan and Grenache vines, limiting yields to encourage ripeness and complexity. This wine is a cask blend of the Jeunes Vignes cuvée (100% Grenache) and the Vieilles Vignes cuvée (100% Carignan). It is only made when the producer deems it necessary.
In the glass we find a wine carried by notes of ripe, black fruit, spices, dried flowers, and a hint of thyme. On the palate, it has a juicy and silky texture. It lingers on notes of coffee and gentle spice. We recommend enjoying it within its first, ten years with a hearty dish like roasted lamb with thyme, Peking duck, or a sweet potato gratin.
