Undisputed icon of the Jura, Jean-François Ganevat has made a reputation for himself as one of the region's top producers. Having learnt the ropes with Jean-Marc Morey in Chassagne-Montrachet, he decided to create his own domain, which he farms organically and biodynamically. Reflecting Burgundian savoir-faire, he produces single-parcel micro cuvées. In the winery, his prefers a hands off approach, allowing the wine to express itself. Domain Anne et Jean-François Ganevat is the name of the négociant business set up by Jean-François and his wife. Quality is top priority, and the couple strive to produce wines in exactly the same way as at their own domain.
Jean-François Ganevat has crafted a Savagnin – the Jura’s emblematic varietal – grown organically in deep, marl-rich soil. Unsurprisingly, the vinification is as natural as possible and includes an oak cask maturation on lees that lasts for two years. The wine was bottled without fining or filtering, hence why there may be some deposit in the bottle. In the glass this wine has an intense, golden colour with an aromatic bouquet that recalls certain Burgundy cuvées with its notes of white and yellow fruit, lemon, grilled nuts, flowers, and minerals. The palate balances ripe fruit with lively acidity and fine persistence. It deserves to be aged in the cellar for a few years before being served with seafood dishes.
