About the wine

This single-varietal Chardonnay cuvée comes from some of the first vines planted at the domain. The grapes are harvested by hand, then half are pressed in whole bunches. Wild yeasts ferment the juice in French oak barrels. The wine is then matured for 9 months in the same kind of container, with up to 43% new wood.
The domain aims for this wine to be both complex and elegant. They have achieved this with a pale cuvée that has an expressive aromatic bouquet of white peach, white flower, cashew nut, lemon zest and patisserie. On the palate we find the same notes through a silky texture lifted by a delicately saline persistence.
We recommend serving this cuvée with fish in a citrus sauce, or a summer salad of salmon, grapefruit, and avocado.
