This Montagny premier cru is the conclusion of a typical, Beaune savoir-faire and a Mâcon terroir. The Chardonnay used to make it enjoys sustainable growing in chalk- and clay-rich soil. Methods incluse ploughing to encourage the roots to push deep, healthy competition between the plants, controlled yields, and harvests by hand in small cases.
In the cellar, the domain does a gentle, pneumatic pressing of whole bunches once the harvest is collected. The juice undergoes both alcoholic and malolactic fermentation. Finally, the wine is matured for 11 months in oak casks with around 25-30% new wood. It is bottled without fining or filtering.
In the glass we discover a rich and beautifully mineral wine. Notes of white fruit and white flowers are enrobed in indulgent hints of baking, butter, almond, and hazelnut.
We recommend keeping this wine in the cellar for a few years before serving it with noble dishes in sauce.
