The Puligny-Montrachet premier cru La Truffière from Jean-Marc Boillot is a single-varietal Chardonnay cultivated in marl- and chalk-rich soil. To craft it, the domain opted for sustainable growing that involves healthy competition between the vines, ploughing that encourages the roots to push deeper, and harvests by hand using small cases. In the winery, the grapes are vinified in whole bunches. Both alcoholic and malolactic fermentation are completed, with weekly stirring to keep the lees suspended. The wine is matured in oak casks and bottled without fining or filtering.
After a few years of ageing, this wine reveals a golden yellow hue with varied, aromatic notes of white fruit, white flowers, nut, butter, and baking. The palate carries these same flavours as well as a richness balanced by frank minerality and a masterful acidity.
