In the thirteenth century, Domaine de Fosse-Sèche was an outbuilding of the Prieuré Saint-Nicolas de Montreuil-Bellay which at the time covered almost 400 hectares. Nowadays the domaine has 45 hectares of which 17 are planted with vines. Certified for organic farming, the domaine is also classified as a LPO bird refuge (LPO: French League for the Protection of Birds).
The pebbles and clay in the soil mean that these vines have deep roots. The temperate area in which the vines are located are influenced by a proximity to the ocean, and this encourages a slower maturation for the grapes. Harvested in early November, botrytis cinerea is allowed to develop on the grapes, increasing the amount of residual sugar in the eventual wine. Matured on lees in casks for 24 months, this sweet, white wine expresses a nose of pineapple, apple compote and candied lemon. The palate is unctuous and concentrated with a certain density. Its fresh finish compensates for the 135g of residual sugar.
