In the thirteenth century, Domaine de Fosse-Sèche was an outbuilding of the Prieuré Saint-Nicolas de Montreuil-Bellay which at the time covered almost 400 hectares. Nowadays the domaine has 45 hectares of which 17 are planted with vines. Certified for organic farming, the domaine is also classified as a LPO bird refuge (LPO: French League for the Protection of Birds).
This pure Chenin comes from 15-year-old vines grown organically and biodynamically in soils of flint, gravel and chalk. After a low-temperature fermentation and a maturation on lees in vats, the wine, which can be aged for over ten years, reveals a complex aromatic bouquet of honey, apple, fruit, white flowers, and quince. Whilst flavourful and well-structured, the palate is balanced by a lively minerality.
