A five-generation family domaine, Domaine Joseph Voillot in Volnay covers 10 hectares divided into 35 parcels and 17 appellations, Volnay, Pommard, Meursault and Beaune. In 1995, Joseph Voillot retired and his son-in-law, Jean Pierre Charlot, took over the reins. Jean-Pierre Charlot is an expert in enology, a subject he taught for a long time in Beaune. The work in the vineyards and the cellar is classical but everything is done well. At the vineyard, the soils are worked twice or three times a year and in the winery, vinification is traditional and fragmented, with native yeasts and pressing. Élevage lasts between 16 and 18 months, with about 25% new barrels. This domaine is particularly renowned for its finesse and the perfect balance of its wines.
Domaine Joseph Voillot, in Volnay, is a five-generation family estate covering 10 hectares, including 35 parcels and 17 different appellations, from Volnay to Pommard, Meursault to Beaune. When Joseph Voillot retired in 1995, it was his son-in-law, Jean-Pierre Charlot, who took up the helm. Jean-Pierre Charlot is an experienced oenologist, having taught on the subject for a long time in Beaune. Work in the vineyard and the cellar could not be more classic, or better executed. The soil in the vineyard is worked twice to three-times a year while, in the cellar, vinification is traditional; plot by plot, using indigenous yeasts and pigeages (punching down the cap of grape skins and seeds). Maturation lasts for between 16-18 months, in barrels (around 25% new wood). This domain is particularly renowned for producing wines with perfect finesse and balance.
On the nose, this cuvée expresses ripe fruit aromas (cherry) with hints of pepper and liquorice. Seductive and pure in the mouth with abundant, fine tannins, juicy consistency and a lovely fruity finish.
