The Pinot Noir grapes, grown in clay-loam soils using sustainable methods, are harvested by hand and fully destemmed prior to maceration and nearly three weeks' fermentation in open thermoregulated vats. The cap is punched twice a day, and the wine is then matured for 12 months in barrels. This ruby-red wine produces aromas of tart black berries, such as blackcurrant, and floral aromas. The palate is fruity, refined and well balanced. The supple tannins enable pairings with refined, tender meats and cheeses.
