It's thanks to winemakers like Sylvain Pataille, who put their passion and talent at the service of the great terroir of Marsannay, that this young appellation has earned its place as one of the top wines of the Côte de Nuits. An unmissable signature, that the iDealwine team is particularly proud to have as one of their partner domains.Sylvain Pataille is a young enologist who had to compare his theoretical background with what really goes on in the vineyard. He managed this well and is today considered one of the great wine growers of Burgundy, hot on the heels of people like Jean Fournier. His "L'Ancestrale" cuvée was classified as a grand cru, due to the exceptional length on the palate. Sylvain Pataille studied enology in Bordeaux, but it is Burgundy whose land he defends with all his heart. He has been certified in organic farming since 2008
This certified organic Marsannay is also made according to biodynamic and natural wine principles., Its Pinot Noir grows on limestone and sandstone soils and is fermented in vats with indigenous yeasts. Naturally, the grapes are hand-harvested when ripe, and meticulously sorted. The wine is aged in barrels (35% of which are new) with fine lees for between 15 and 18 months.
It has a beautiful ruby colour typical of Burgundy Pinots. The nose reveals hints of cherry and flowers. The palate is deep and elegant. There are hints of red fruits, enhanced by a rich minerality. The tannins are perfectly integrated with the rest of the wine.
While this Marsannay can be enjoyed immediately, it will improve even more with time, up to 20 years. For a food and wine pairing, opt for game or poultry.
