Domaine Jean Macle was founded in 1850. Laurent Macle manages the 12 hectares of elevated vineyard today that is laid out to Chardonnay and Savignin in the Côtes-du-Jura and Château-Chalon appellations. This domain is well-known in the Jura and its beautifully balanced vins jaunes are iconic.
The domain's "little gem", a mere 3000 bottles being produced, this Chardonnay aged sous voile is reminiscent, to a certain extent, of vin jaune. In fact, thanks to its typically Jura élevage (three months sous voile as compared to six years and three months for vin jaune), the wine is blessed with aromas such as walnut and spices (curry, nutmeg, saffron). Delicious if enjoyed straight away, it is even better when aged for several years and paired with flavoursome dishes such as a mature cheese or a sauce-based fish or poultry dish.
