The origins of Domaine Arlaud date back to World War II when Joseph Arlaud, from the Ardėche, met and married a lady from Bourgogne, Renée Amiot, whose family owned a vineyard. The couple developed and expanded the domaine. In 1982, their son, Hervé Arlaud took over and enlarged the domaine further, while developing bottle sales. Today, the third generation (Bertille, Cyprien and Romain) manage the operation and do very high quality work. The 15 hectare vineyard is certified organic and biodynamic and includes the very fine terroirs of Bonnes-Mares, Charmes-Chambertin and also Clos de la Roche. The vines and soil are well worked (ploughed by horses) and the élevage is increasingly controlled, producing magnificent, very pure wine with remarkable finesse. Chambolle Les Sentiers is produced on a tiny, clay and chalk rich parcel of 23 ares. The vines were planted in 1966. The grapes are fermented with indigenous yeasts before barrel-maturing in oak (25% new) for 14 to 18 months. This cuvée has intense aromas of red and dark fruit. The tannins are very silky on the palate and there is a highly subtle quality to the texture and flavours, a distinctive but pleasant acidity and an enjoyable long finish. This wine makes a perfect pairing with red meat and some game (feathered especially).
