The Boillot family has owned vines in Volnay since 1850. A century later, Lucien Boillot acquired vines in Gevrey-Chambertin where he decided to set up his domaine. It is now his son Pierre who now runs the domaine. It therefore has plots in Côtes des Nuits and in Côtes de Beaune on many terroirs, which is rare for a small domaine. The average age of the vines is high (almost 55 years old) which explains the complexity of all the cuvées of the field. The grapes are fully destemmed. The treatments are limited as much as possible, as are the vinification processes which are intended to be as least intrusive as possible (native yeast, élevage with 30% of new barrels. A great name.
This lieu-dit owes its name to the word "Fremyer" which means "firm" or "solid" in old French. The wine's intensity and the finesse of its tannins will indeed open up to marvellous effect when enjoyed with red meat. And why not add a pepper sauce - it will add the perfect finishing touch.
