Domaine du Sang des Cailloux was created in 1975 and bought by Serge Férigoule in 1990. As a sustainable winegrower, Serge decided to prohibit the use of chemical herbicides and artificial products. In 2003, his son Frédéric joined him to assist with cultivating the domain's 17-hectare vineyard on a plateau facing the breathtaking Dentelles de Montmirail in the Vacqueyras appellation. Together, they decided to apply firstly for organic certification and then biodynamic. The reddish brown, clay-limestone and pebble terroir is primarily cultivated for red wine. For some years though Serge and Frédéric have also been trying their hand at white wine.
Azalaïs – an organically certified, biodynamic Vacqueyras wine – is a blend of Grenache, Syrah, Mourvèdre, Cinsault and Carignan from a terroir composed mainly of clay, limestone and pudding stones. The grapes are destemmed and vinified traditionally in concrete vats with daily pump-overs. The wine is then matured for 12 months in 450-litre wooden tuns. Its intense colour reveals a rich, powerful wine with a ripe (even stewed) nose and spicy notes. After a few years' keeping, it is still full-bodied, with prominent but mellowed tannins. The wine's long, pleasant finish lends it excellent balance.
