Jean Christophe Comor started producing his certified organic wines in 2004, following a herculean effort cutting down trees, clearing stumps and preparing the land for replanting vines! One-time parisien and professor at the prestigious Sciences Po university, his winemaking whim has well and truly paid off; now producing wines with a unique character, elegance and complexity and in a style which improves with each vintage. One to watch.
Jean-Christophe harvests his Cinsault, Carignan and Grenache grapes early in the morning in order to preserve their freshness. Vines are aged between 20 and 30 years-old and are cultivated according to organic and biodynamic methods, yielding around 30 hl/ha. In the winery vinification relies on spontaneous ferments with limited filtration and sulphites. L’Apostrophe seduces with its pale salmon-pink hue, offering fresh and lively notes of red fruit and appetising crunch in the mouth. For drinking on its own as an aperitif or accompanying a first course.
