Information
The story of Domaine Goisot goes back to the 14th century. It has vines in the Auxerre area in Saint-Bris and Irancy. Jean-Hugues and Gilhem Goisot chose biodynamic viticulture as the best way to respect the upper Jurassic marl, limestone terroir very similar to that of Chablis. Their motto is that a good wine cannot be made without good grapes. Vinifications are traditional, with minimal intervention to best express their much cared-for terroir.
The chances to savour a Saint-Bris wine are few and far-between, and the Goisot domain succeeds in making us immediate fans of it. Made from an unusual grape variety, Fié Gris, this wine is golden in colour with hints of pink. Its bouquet gives off notes reminiscent of Gewurztraminer in some ways, with aromas of rose, lychee, and candied apricot. Flavourful, this certified organic and biodynamic wine can be enjoyed young or after some years of ageing, and will pair well with recipes that bring together sweet and savoury elements.
