The domaine, which is internationally renowned for its Chardonnays and Sauvignons, is at the cutting edge of modern oenology and technology, but has nevertheless established a reputation for revisiting age-old practices such as wooden containers, terracotta amphorae and indigenous grape varieties including Ribolla Gialla. To cite Josko Gravner “modern oenology has helped me to understand that previous generations were right.”
The wine has fermented with native yeasts in amphorae, where it is then matured for a year. Following that, it is aged for 60 months in oak barrels. Tastings reveal this astonishing wine to have an amber, slightly cloudy appearance: it has not been filtered. The bouquet is unusual, and very appealing. Its nose is rich in mineral and floral notes. The palate is slightly tannic. This white wine is perfect as an accompaniment to plentiful meals, and for keeping several years in the cellar. "UFO" would hardly be an exaggeration.
