Jean Christophe Comor started producing his certified organic wines in 2004, following a herculean effort cutting down trees, clearing stumps and preparing the land for replanting vines! One-time parisien and professor at the prestigious Sciences Po university, his winemaking whim has well and truly paid off; now producing wines with a unique character, elegance and complexity and in a style which improves with each vintage. One to watch.
L'Antidote was the first wine produced by Jean-Christophe Comor and was conceived to use the most natural winemaking methods available. The Carignan grapes are harvested by hand, trampled by foot and vinified without fining, filtration or the addition of sulphites, using only spontaneous ferments. Semi-carbonic macertation lasts 3 weeks. This is a truly astonishing single-variety Vin de Pays, especially since Carignan is so often associated with being a coarse, rustic varietal; but this cuvée is a different story, managing to be impossibly light and fresh offering fruit-forward aromas and fine, crunchy tannins.
