Humility. A word that accurately sums up Guillaume Gilles, a rising star of the northern Rhône. This young winemaker made his debut amid some of the biggest names in the region such as Jean-Louis Chave and Robert Michel. He started his winemaking adventure in 2002 when he inherited half a hectare in Cornas from his grandfather. Truly passionate about his terroir, Guillaume's work both in the vineyard and the cave is a labour of love that produces wines with depth, power and finesse. Micro-parcel vinifications have become somewhat of a trademark of his and his Les Chaillots terroir is divided up into three separate vinifications: La Combe, Les Terrasses and Les Grands Murs. Sustainable agriculture, hand worked vines and tilled soil ensure high quality grapes. This is a domaine we urge you to discover but be warned that production is small.
Located at the foot of the "Chaillot" parcel, the La Combe de Chaillot vines cover 0.8 ha and have been vinified separately since 2009, because of the difference in maturity of the Syrah grapes, which ripen in loamy, sandy and granitic soils. After manual harvesting, almost all the grapes are destemmed. The wine is vinified in open vats with native yeasts, without being punched down. It is then matured for 16 months in casks, without fining or filtration, before being bottled. Tastings of this Cornas reveal a tauter, more mineral character. This is partly the result of the soil in which it grows, benefiting from a cooler climate than the domain's other parcels. However, the nose remains rich and dense. A real bouquet of black berries with floral, spicy notes. In the mouth, the tannins are refined and coated with dominant black berry notes. The finish is long, ending beautifully with small peppery touches.
