Pierre and Murielle Quinonero have been making critically-acclaimed wines since 1991. The vineyard is run according to organic farming principles. Located to the north-east of Pézenas (Languedoc) in the breath-taking village of Caux, the estate produces powerful, distinguished wines that reflect the huge variety of soil types (pebble, clay, limestone, basalt) used to grow the vines of Carignan, the region’s main grape variety.
This 100% Carignan was harvested at optimal maturity, having been farmed organically (without certification). Whole bunches undergo vinification and the wine is raised for 2 years in concrete vats and oak barrels. After aging in the cellar for around 10 years and decanting for 2 hours before serving, the wine unveils an intense purple robe, powerful aromas of red fruits lifted by touches of garrigue and mint. Works wonders with a magret de canard.
