Maison Albert Bichot was created in Burgundy in 1831. The famous Chardonnay wine traders acquired many plots throughout Burgundy. Its fabulous vineyards are divided between several areas which have autonomous teams and cellars. Maison Bichot thus owns the Long-Depaquit domaine in Chablis, the Clos Frantin domaine in Nuits-Saint-Georges (as well as the Château Gris on a monopole of the village) and the Adélie domaine at Mercurey. Finally, on the Côte de Beaune, at Pommard, it owns the Domaine du Pavilion, mentioned here. This includes 17 hectares of vines, 8 of which are for white crus. The domaine follows a biological approach to vines with a respect for nature and a control of yields. The winery of the domaine is located in the middle of the Clos des Ursulines in Pommard
Pommard is one of the most famous communes in the Côte de Beaune, producing red wines with a worldwide reputation. The "Les Rugiens" climat is located in the south of the appellation and produces powerful wines with pronounced tannins. It is one of the village's most sought-after premier crus. The Domaine du Pavillon's Pommard premier cru is a great wine for aging. The attack is supple, but through the middle of the mouth, its firm yet elegant tannins appear. The finish is reminiscent of fine spices.
