It has now been thirty years since Gilles Berlioz changed career paths from landscaping to wine making. Passionate and modest, he is careful in the cultivation of his Chignin terroirs, going as far as to work his land with horses. Converted to organic growing in 2005, this 5-hectare domain has recently been certified biodynamic by Demeter. The wines, vinified as one cuvée per terroir, are wonderfully accomplished, pure, mineral and delicate. They aren't made in large quantities, but these cuvées perfectly represent their terroirs. Impassioned by the evolution of his work, Gilles Berlioz is always looking for new ways to improve his vines and growing techniques, always with the aim of better respecting the nature that surrounds him.
The “Les filles” cuvée is a fine gastronomic wine, at once rich and complex, intensely fruity while fresh and digestable. The grapes are grown in certified organic and biodynamically-cultivated parcels. No inputs or yeasts are added, and only a small amount of sulphites is used. Its brilliantly clear, lemon yellow colour reveals a superb bouquet of stone fruits, white flowers and fresh herbs. This wine deserves to be aged for a good few years (up to twelve years), and should be decanted in order to unleash its wonderful purity. Excellent at aperitif with a Tomme de Savoie!
