Maison Albert Bichot was created in Burgundy in 1831. The famous Chardonnay wine traders acquired many plots throughout Burgundy. Its fabulous vineyards are divided between several areas which have autonomous teams and cellars. Maison Bichot thus owns the Long-Depaquit domaine in Chablis, the Clos Frantin domaine in Nuits-Saint-Georges (as well as the Château Gris on a monopole of the village) and the Adélie domaine at Mercurey. Finally, on the Côte de Beaune, at Pommard, it owns the Domaine du Pavilion, mentioned here. This includes 17 hectares of vines, 8 of which are for white crus. The domaine follows a biological approach to vines with a respect for nature and a control of yields. The winery of the domaine is located in the middle of the Clos des Ursulines in Pommard
Le Clos des Mouches is one of Burgundy's true gems, with some even considering it worthy of grand cru status. The plot owned by the Domaine du Pavillon is 300 metres above sea level and has a south/south-easterly exposure. The soil is of the limestone marl type and produces wines of breathtaking freshness, with a minerality and refinement characteristic of this climat. Notes of white flowers and honey on the nose. A sophisticated mouthfeel, with immense length.
