"Spirit of Haiti was founded in 2012 to support the producers of Haitian Clairin. The company brings together a number of traditional distilleries to gather pure eaux-de-vie. The company then matures the spirits in barrels and bottles them. Producers selected for their spirits are rigorously screened based on the variety of sugar cane they produce, which must be cultivated in accordance with organic farming methods. The harvests must also be exclusively conducted by hand. The producers thus use only fresh sugar cane juice or syrup to produce their spirits. Fermentation is carried out using locally available wild yeasts, and distillation is conducted using a traditional copper still.
 It is in this peaceful, favoured setting, that the company conducts the ageing process in wooden casks to produce authentic, unique spirits, reflecting the ancestral expertise of passionate producers. "
